Often with new recipes, it’s a case of trying and testing different combinations until we find the perfect one, but sometimes the inspiration just comes to me when I’m not expecting it!
This was the case with our Verde rolls and wraps. The unexpected driving force behind this one? My husband.
The Verde rolls are one of my favourites, but not simply because they’re delicious, but because they’re healthy. Whether you prefer the veggie, tuna mayo, salmon or maki, or you’re a fan of the Verde wraps, they all have one thing in common: they’re aimed at upping your veg quota! Stuffed full of herbs and vegetables (well, technically avocado is actually a fruit, but anyway…) and held together with crispy, fresh lettuce, they’re basically a salad sushi. Which was my intention, as I wanted my husband to eat more salad!
He was always rushing about, and when he did sit down in front of a salad it took him so long to eat it with a fork that he inevitably got distracted and left half of it behind. He would eat a sandwich ‘on the run’, but that’s usually not the healthiest choice. So, with him and all the other health-conscious-but-busy-sushi-lovers in mind, we created the Verde and never looked back.
